Course Outcomes:
Participants should be able to explain the importance of food safety, state hazards posed by different pathogenic microorganisms, recognize the risk ranking of different food products, identify what might happen if hazards are not controlled, understand the steps of foodborne illness outbreak investigation and control, state the main ways of preventing future incidence of food poisoning, and know the good practices that improve the safety of food.
Course Structure:
Week 1: An overview of the importance of food safety and the information needed to become familiar with common foodborne pathogens
Week 2: How microbes cause food poisoning
Week 3: Safe food handling techniques
Week 4: Foodborne outbreaks – investigation and surveillance
Week 5: Food safety – from farm to table
Week 6: Food safety – control and prevention
About the Instructor:
Dr. Walid Alali is an associate professor of epidemiology, graduate coordinator of the Master of Public Health (MPH) program, and a founding member of the College of Health and Life Sciences at Hamad bin Khalifa University (HBKU). His research interests are in the epidemiology of foodborne pathogens and antimicrobial resistance in the human-animal-food interface. Prior to joining HBKU in August 2015, Dr. Alali worked as an associate professor (with tenure) at the Center for Food Safety of the University of Georgia in the United States. He has published more than 40 peer-reviewed papers (22 as a senior author), 3 book chapters, and delivered over 30 invited talks (nationally and internationally). Dr. Alali has received multiple prestigious awards that have recognized his research activities and leadership skills. In 2013 he served as the President of the Georgia Association for Food Protection. He serves on the editorial board of international journals such as the Journal of Food Protection, and has supervised and trained graduate and undergraduate students as well as international visiting scientists.
